This\nsolution includes the development of specific food ingredients with reduced allergenicity,\nor more tolerable products for sensitive population, as well as the\ntechnologies and processes for obtaining them, and the development of rapid\nmonitoring and control tools to test the allergenic potential of developed\nproducts.<\/p>\n\n\n\n<p><strong>Specific objectives:<\/strong><\/p>\n\n\n\n<p>To achieve the main objective, the following partial\nscientific-technical goals will be addressed:<\/p>\n\n\n\n<ul><li>Design and\ndevelopment of at least one new hypoallergenic infant formula (prototype),\nalternative to current hydrolyzed formulas, from new sources of protein,\nincluding both its formulation and its correct characterization.<\/li><li>Development of\nnew protein hydrolysates and new ingredients from unused fractions (e.g. whey),\nwith new features.<\/li><li>Development of\nnew tools for assessing and monitoring food safety by the detection of milk and\nsoy protein, in order to validate the safety of developed food matrices and\nproviding new tools for monitoring and decision-making regarding the management\nof allergens in the global food industry.<\/li><li><em>In vitro<\/em>&nbsp;validation\nof the safety and tolerability of the developed products.<\/li><li>Scaling-up\n(pre-industrial level) and clinical validation of the safety and tolerance of\ndeveloped prototypes. Improve production processes, seeking flexibility to\nadapt to changes in demand. Optimization of production resources.<\/li><li>Implement a test\nmarket for products developed and launched new products with high added value.<\/li><\/ul>\n\n\n\n<p>Thus, the SOLMILK project will promote the generation\nof innovative products for the dairy food industry, with high added value in\nthe market and with excellent organoleptic and nutritional characteristics. It\nwill also allow to drive new applications for novel technologies and strategies\nstudied, which will be of great importance for the future incorporation of\nthese technologies in the food industry.
