The preparation process and the preservation technology for the new product were defined and validated so that the product can be refrigerated (between 4 \u00b0C and 7 \u00b0C) and preserved in perfect conditions for 11 days, without the need for any additives or preservatives.&nbsp;<strong>It is a completely natural product,&nbsp;<\/strong>as the only ingredients are Gernika peppers and extra virgin olive oil. Straight from farm to fork.<\/p>\n\n\n\n<p>Gernika peppers&nbsp;<strong>are a native variety of peppers produced in the Basque Country<\/strong>. They were only known locally until recently, but their particular flavour and finesse&nbsp;<strong>have made them famous and they are even used in fine dining cuisine.<\/strong><\/p>\n\n\n\n<p>The AZTI technological centre has worked in close collaboration with companies such as Garaia Koop that are committed to R&amp;D to increase the value of their products and to penetrate the market, responding to consumer trends and strengthening their
